  • 3 c. dry kidney or possibly Taylor beans - (1 lb, 2-ounce)
  • 4 ounce duck fat (sold frzn at specialty markets)
  • 4 lrg spicy pork sausages
  • 1/4 lb smoked bacon
  • 1 lrg onion sliced
  • 1 x bouquet garni (knot 3 sprigs thyme, 1 sprig rosemary, 2 sage leaves and 4 sprigs parsley together in cheesecloth)
  • 4 x garlic cloves
  • 1 tsp sea salt or possibly to taste Freshly-grnd black pepper to taste
  • 2 lrg peeled carrots peeled, and cut in 1/4" slices
  • 2 lrg tomatoes peeled, seeded, and quartered (or possibly liquid removed 14-ounce can minced tomatoes)
  • 1 Tbsp. minced parsley

Directions

  1. Place the beans in a bowl; cover by 3 inches with cool water. Soak 8 hrs. Drain. Cook in boiling water 30 min, then drain.
  2. In a large, heavy saucepan, heat the fat over medium-high heat. Fry the sausages till browned. Remove from the pan, reduce heat to medium and add in the onion. Cook till golden brown, 5 min. Add in the bacon, beans, bouquet garni, garlic, and season with salt and pepper. Add in cool water to cover. Cook uncovered, 1 1/2 hrs.
  3. Check the seasoning. Add in the carrots and tomatoes. Cook 30 min, then set sausages on top, check seasoning, and cook till the water is just under the beans and thick, 30 min to 1 hour.
  4. This recipe yields 8 servings.
