  • 1/2 lb Pinto beans -- dry
  • 1 x Onion -- minced
  • 1 x Salt pork -- about 1/2" wid
  • 1 x Tomato -- minced
  • 1/2 tsp Oregano
  • 2 x Garlic -- chopped
  • 1 Tbsp. Chili pwdr
  • 1 x Pepper, Poblano -- seeded And
  • 4 x Bacon -- minced
  • 2 Tbsp. Cilantro -- minced

Directions

  1. Ea salt ea pepper Soak beans, cover with water in a medium kettle for two hrs. Add in salt pork and bring to a boil over medium heat. Reduce heat, cover and cook 1 1/2 to 2 hrs.
  2. Add in salt, pepper, oregano, and chili pwdr and continue to simmer. Saute/fry bacon, onion, garlic, tomato,Poblano pepper and cilantro for approximately 10 min. Add in to beans and simmer an additional 30 min or possibly till beans are tender.
