Basic Grilled Tomato Slices

Ingredients

  • 4 med size to large tomatoes sliced 1/4 to 1/3 inch thick (4 to 8)
  • 3 Tbsp. extra virgin extra virgin olive oil or possibly 1/4 c. your (3 to 4) favourite marinade salt & black pepper (optional)

Basic Grilled Tomato Slices

Directions

  1. Prepare a medium warm fire in the grill. A lightly oiled grilled rack is optional but recommended. Brush the tomatoes with the extra virgin olive oil or possibly marinade. Grill the tomatoes till tender and grill marked, about 5 min. Then flip carefully and grill on the second side till lightly grill marked 1 to 2 min more. Avoid overcooking. Remove from the grill, taste and add in salt and pepper if needed. Serve warm.
  2. NOTES : I prefer to use plum tomatoes for grilled slices as they hold their shape best but you can use regular beefsteak type tomatoes. The trick is to grill the tomatoes till pretty much done on the first side, then flip and grill very briefly on the second side. Do not overcook or possibly the tomato will fall apart. A vegetable grill rack, that isn't 100 per cent necessary enables you to slip the spatula under the tomatoes without damaging the soft flesh.
