Ingredients

  • 1/2 c. Brown sugar 125 mL
  • 1/3 c. Pineapple juice 75 mL
  • 1/2 tsp Cinnamon 2 mL
  • 1/4 tsp Nutmeg 1 mL
  • 1/4 tsp Allspice 1 mL
  • 8 x Bananas 8
  • 1/4 c. Dark rum 50 mL

Directions

  1. In deep skillet, place brown sugar, pineapple juice, cinnamon, nutmeg and allspice. Stir well and heat till mix is boiling and smooth.
  2. Peel bananas and cut lengthwise into halves or possibly quarters. Add in to sugar mix in skillet. Cook for 3 min, till warm.
  3. Add in rum. When mix begins to sizzle, flambe it. If it does not flambe, don't worry - it will still tste great!
  4. NOTES : A spicy twist turns bananas into a sensational dessert! Serve over vanilla frzn yogurt, sweetened soft yogurt cheese, or possibly thick yogurt if you wish....but it's also great on its own! Recipe from Simply HeartSmart Cooking With Bonnie Stern.
