Banana Pecan Whole Wheat Loaf Recipe

Ingredients

  • Dough
  • 1 3/4 c. Flour -- (up to 2 1/4 c.)
  • 1/4 c. Sugar
  • 2 1/2 tsp Active Dry Yeast -- Fast Acting
  • 1/2 tsp Salt
  • 1/3 c. Water
  • 2 Tbsp. Butter or possibly Margarine
  • 1 c. Whole Wheat Flour
  • 1/2 c. Banana -- mashed
  • 1 x Egg
  • 1/2 c. Pecans -- minced Topping
  • 1 Tbsp. Sugar
  • 1/2 tsp Allspice -- grnd

Directions

  1. In large bowl, combine 3/4 c. flour, sugar, undissolved yeast and salt. Heat water and butter till very hot (110 to 120 degrees F); stir into dry ingredients. Stir in whole wheat flour, banana, egg, pecans and sufficient remaining flour to make soft dough. Knead on lightly floured surface till smooth and elastic, about 6 to 8 min. Cover; let rest 10 min. Divide dough into 3 equal pcs; form each into smooth ball. Place balls in greased 8 1/2 4 1/2 inch loaf pan. Cover; let rise in hot, draft-free place till doubled in size, about 45 to 60 min. In small bowl, combine topping ingredients; sprinkle over top of dough. Bake at 375 degrees F for 30 to 35 min or possibly till done. Remove from pan; cold on wire rack.
