  • 4 x Large eggs
  • 2 x ripe bananas mashed
  • 1/2 c. unsweetened apple sauce
  • 10 pkt sweetener
  • 2 tsp vanilla
  • 1/4 tsp allspice
  • 2 1/2 c. Lowfat Muffin Mix see recipe

Directions

  1. Pre-heat oven to 350 F.
  2. Spray a large muffin pan (1 dozen).
  3. Mix liquid ingredients in a medium sized bowl.
  4. Mix dry ingredients in a large sized bowl.
  5. Make a well in the center of the dry mix, and pour the wet mix into the well.
  6. Mix everything gently till just moist - don't overmix or possibly the muffins will be tough.
  7. Bake at 350F for about 20 min (or possibly till the sides of the muffin begin to pull away from the pan).
