Banana Layer Cake With Cream Cheese Frosting

Ingredients

  • 2 c. Mashed bananas -- about 4
  • 1/4 c. Lowfat milk
  • 1 c. Shortening
  • 2 tsp Vanilla
  • 2 c. Sugar
  • 4 x Large eggs -- unbeaten
  • 4 1/2 c. All-purpose flour -- sifted
  • 4 tsp Baking pwdr
  • 1 tsp Salt FROSTING
  • 1/2 c. Butter
  • 8 ounce Cream cheese
  • 1 tsp Vanilla
  • 1 lb Sugar Lowfat milk -- optional

Directions

  1. Combine bananas and lowfat milk. Cream together shortening and vanilla; gradually add in sugar, beating till light and fluffy. Add in Large eggs, one at a time, beating well, mix till light and fluffy. Sift together flour, baking pwdr, and salt. Add in alternately with bananas and lowfat milk to creamed mix, beating some after each addition. Three 9" pans, greased. Bake: 350F for 30-35 minutes.
  2. Cream Cream Frosting: Combine butter, cream cheese, and vanilla. Cream well. Gradually add in powdered sugar (sift if lumpy), beating well. If mix is too thick to spread, add in a small amount of lowfat milk.
