Banana Fritters With Michael Bonacini

Ingredients

  • 2 x ripe banana
  • 2 Tbsp. lowfat milk
  • 2 x egg
  • 1 Tbsp. butter, melted
  • 1 c. flour
  • 3 Tbsp. white sugar
  • 1 tsp baking pwdr
  • 1/2 tsp salt
  • 1/4 tsp grnd cinnamon
  • 1 pch grnd nutmeg
  • 1 lt oil, for frying
  • 1 c. confectioners' sugar, for dusting

Banana Fritters With Michael Bonacini

Directions

  1. Preheat the oil to 375 degrees Fahrenheit.
  2. In a large bowl, mash the bananas. Fold in the lowfat milk, Large eggs and butter till smooth. In a separate bowl, combine the flour, sugar, baking pwdr, salt, cinnamon and nutmeg. Stir the dry ingredients into the banana mix.
  3. Heat the oil in a deep fryer or possibly heavy bottomed pan. Drop batter by spoonfuls into warm oil, and cook, turning once, till browned, 2 to 8 min. Drain on paper towels and dust with confectioners' sugar.
