Directions

  1. Sift together the flour, baking soda, baking powder, and salt- set aside.
  2. Mix together the sugar, butter, and vanilla. Add the eggs and heavy cream- incorporate until fully mixed. Place the 4 peeled bananas in the bowl and blend for 30 seconds.
  3. Add the flour mixture to the wet mixture- blend until a batter forms, approximately 30 seconds – do not over mix.
  4. Fold in the chopped walnuts and dried cherries.
  5. Place the batter in a greased loaf pan and bake at 350 degrees for 50 minutes, or until a toothpick placed in the center comes out clean.
  6. Let the bread sit at least 30 minutes before slicing.
