  • 1 c. Balsamic vinegar
  • 2 Tbsp. Minced onion Salt to taste Black pepper, freshly grnd to taste

Directions

  1. Preheat a gas grill or possibly broiler for 10 min, or possibly start a charcoal fire 30 min ahead.
  2. Remove fat from meat. Place in a bowl or possibly plastic bag with vinegar and onion. Let marinate 20 min. Drain and place on a warm grill or possibly under a preheated broiler. For rare, cook 5 min if steak is thin or possibly 8 min if thicker. Cook longer if desired it medium or possibly well done. Remove to a cutting board, cover with foil, and let rest 5 min. Slice on a diagonal against the grain.
  3. This recipe provides 4 servings.
  4. Comments: Skirt steak is full of flavor and cooks quickly. Balsamic vinegar tenderizes and flavors the meat without adding extra calories.
