Balsamic Chicken And Penne Pasta

Ingredients

  • 1/4 c. Extra virgin extra virgin olive oil
  • 1/4 c. Balsamic vinegar
  • 2 Tbsp. Sugar
  • 2 Tbsp. Grey Poupon mustard
  • 2 pch cayenne pepper
  • 3 x Cloves garlic, crushed
  • 3 Tbsp. Water
  • 6 x Boneless chicken breasts
  • 1 lb Penne pasta

Directions

  1. Combine the first seven ingredients to make the marinade (mix them well).
  2. Marinate the chicken breasts for 1 - 2 hrs (marinate longer if you want the chicken to be more flavorful).
  3. Broil chicken breast till cooked through, then shred or possibly cut into bite-sized pcs. Combine cooked chicken with leftover marinade and cooked penne. Heat everything through thoroughly (the remaining marinade must be cooked because there was raw chicken sitting in it). Serve with grated Parmesan cheese.
