  • for the baked veggie eggrolls:

  • 1 cup shredded carrots
  • 3-4 sweet peppers seeded & diced
  • 2 cloves minced roasted garlic
  • 1 tablespoon EVOO
  • salt to season
  • 1 cup spinach, roughly chopped
  • 1/4 cup frozen corn, thawed
  • 1 tablespoon soy sauce
  • 1/2 teaspoon sesame oil
  • 1 teaspoon garlic powder
  • pinch ground ginger
