If the tofu is mixed with fresh or possibly dry herbs, spray lightly with cooking spray. If sauce is used don't spray. Bake the tofu in a preheated 400 oven for 25-35 min stirring several time during baking, for a crispier tofu, bake at 500 instead of 400.
  3. Cajun/creole Sauce: combine 1/4 to 1/2 c. catsup seasoned with chile peppers and a dash of Tabasco. Herbs: Cajun or possibly Creole spice mix. Serve over white or possibly "dirty rice' topped with spicy tomato sauce.
  4. Mexican Sauce 1/4 c. salsa or possibly mole sauce from a jar. Herbs: mexican seasoning blend, dehydrated garlic and onions. Serve in taco shell or possibly flour tortilla with salsa and non-fat lowfat sour cream and low-fat cheese.
