,%20at%20least%20one%20great%20flank%20steak%20meal%20and%20a%20few%20runs%20to%20burn%20off%20the%20Easter%20candy%20that%20always%20seems%20to%20linger.%20Curse%20those%20Cadbury%20mini%20eggs!%3C/p%3E%3Cp%3EAll%20of%20that%20fresh%20air%20and%20activity%20made%20us%20hungry.%20And%20not%20just%20for%20chocolate%20and%20jellybeans,%20but%20for%20filling%20protein,%20whole%20grains%20and%20lots%20of%20fruits%20and%20veggies.%20Which%20means%20that%20these%20salmon%20meatballs%20with%20avocado%20sauce%20disappeared%20from%20the%20plate%20in%20a%20matter%20of%20minutes.%20A%20couple%20of%20my%20kids%E2%80%99%20friends%20were%20at%20the%20house%20when%20I%20first%20made%20these%20and%20they%20all%20gathered%20around%20the%20kitchen%20island,%20popping%20one%20after%20another%20into%20their%20mouths.%3C/p%3E%3Cp%3EKid-friendly?%20Yeah,%20I%E2%80%99d%20say%20so.%3C/p%3E%3Cp%3EThere%20are%20so%20many%20food%20reasons%20to%20get%20excited%20for%20springtime.%20Asparagus,%20cauliflower,%20strawberries%20and%20one%20of%20my%20all%20time%20favorites%E2%80%A6avocados.%20California%20avocados,%20to%20be%20exact.%20For%20the%20past%20couple%20of%20years,%20I%E2%80%99ve%20been%20an%20ambassador%20for%20California%20Avocados.%20I%20continue%20to%20work%20with%20them%20because%20I%20am%20convinced%20that%20there%20is%20no%20avocado%20like%20a%20California%20avocado.%3C/p%3E%3Cp%3EI%20can%E2%80%99t%20count%20the%20number%20of%20times%20that%20I%E2%80%99ve%20spooned%20an%20avocado%20straight%20out%20of%20the%20skin%20and%20into%20my%20mouth.%20With%20a%20little%20sprinkle%20of%20salt,%20thank%20you%20very%20much.%20As%20good%20as%20they%20are%20straight%20or%20sliced%20up%20for%20sandwiches%20and%20salads,%20their%20natural%20creaminess%20lends%20itself%20really%20well%20to%20sauces%20that%20taste%20and%20feel%20rich%20and%20luxurious,%20but%20don%E2%80%99t%20have%20a%20drop%20of%20actual%20cream%20in%20them.%20Healthy%20fats,%20fiber%20and%20vitamins?%20Win,%20win%20and%20win.%3C/p%3E%3Cp%3EThe%20meatballs%20take%20very%20little%20time%20and%20effort%20to%20put%20together.%20Just%20throw%20some%20salmon%20into%20a%20food%20processor%20and%20give%20it%20some%20pulses%20until%20it%E2%80%99s%20finely%20chopped.%20If%20you%20don%E2%80%99t%20have%20a%20food%20processor,%20no%20worries.%20You%20can%20chop%20up%20that%20salmon%20the%20old%20fashioned%20way,%20with%20a%20sharp%20knife%20and%20a%20cutting%20board.%3C/p%3E%3Cp%3EAfter%20that,%20incorporate%20the%20salmon%20with%20some%20onion,%20garlic,%20spices%20and%20cilantro,%20and%20form%20them%20into%20meatballs.%20I%20always%20use%20my%20cookie%20scoop%20to%20portion%20out%20even%20meatballs.%20It%E2%80%99s%20a%20time%20saver,%20for%20certain!%3C/p%3E%3Cp%3EWhile%20the%20meatballs%20are%20baking,%20whip%20up%20the%20avocado%20sauce%20ingredients%20in%20a%20food%20processor%20or%20blender.%20Be%20sure%20to%20taste%20the%20sauce%20and%20adjust%20the%20salt%20and%20chipotle%20chile%20powder%20according%20to%20your%20preference.%3C/p%3E%3Cp%3EIf%20you%20can%E2%80%99t%20find%20chipotle%20chile%20powder%20at%20your%20local%20grocer%20store%20(or%20don%E2%80%99t%20want%20to%20wait%20for%20it%20to%20arrive%20from%20Amazon),%20you%20can%20use%20some%20adobo%20sauce%20from%20a%20can%20of%20chipotle%20peppers.%20It%20will%20lend%20the%20same%20great%20smokiness%20and%20touch%20of%20heat%20to%20the%20sauce.%3C/p%3E%3Cp%3E%C2%BE%20California%20avocado,%20skin%20&%20seed%20removed%203%20tbsp%20fat-free%20plain%20Greek%20yogurt%201%20clove%20garlic,%20minced%20%C2%BD%20lime,%20juiced%205%20tbsp%20water%202%20tbsp%20minced%20cilantro%20%C2%BC%20-%20%C2%BD%20tsp%20chipotle%20chile%20powder%20(see%20note)%20%C2%BC%20tsp%20salt,%20or%20to%20taste%20%C2%BC%20tsp%20ground%20pepper%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20degrees%20F.%20Coat%20a%20large%20baking%20sheet%20with%20cooking%20spray.%20Place%20the%20salmon%20in%20the%20bowl%20of%20a%20food%20processor.%20Pulse%20until%20finely%20chopped,%20scraping%20down%20the%20sides%20as%20necessary.%20Transfer%20to%20a%20large%20bowl.%20To%20the%20salmon,%20add%20the%20onion,%20breadcrumbs,%20cilantro,%20egg%20white,%20garlic,%20salt,%20pepper,%20paprika%20and%20oregano.%20Stir%20to%20combine.%20Using%20a%202%20tablespoon%20portion%20of%20the%20salmon%20mixture,%20form%20meatballs%20by%20rolling%20between%20the%20palms%20of%20your%20hands.%20Place%20the%20meatballs%20on%20the%20prepared%20baking%20sheet,%20spacing%20evenly.%20Bake%20until%20the%20meatballs%20are%20firm%20to%20the%20touch%20and%20cooked%20through,%2015%20to%2018%20minutes.%20Serve%20the%20meatballs%20with%20the%20avocado%20sauce.%20In%20the%20bowl%20of%20a%20food%20processor%20or%20blender,%20combine%20the%20avocado,%20yogurt,%20garlic,%20lime%20juice,%20water,%20cilantro,%20chipotle%20chile%20powder,%20salt%20and%20pepper.%20Blend%20until%20smooth.%20%20%20Weight%20Watchers%20Points:%207%20(Points+),%206%20(Old%20Points)%20%20%20%20Serving%20size:%205%20meatballs%20+%202%20t
