  • 2 eggs
  • 1 cup white sugar
  • 3/4 cup potato flour
  • 1/4 cup starch (I used tapioca, but arrowroot would work too)
  • 1 1/2 cup gluten free flour with xanthan gum
  • 1/2 extra tsp xanthan gum
  • 1/4 tsp freshly grated nutmeg
  • 1 cup unsweetened milk of choice (I used almond milk)
