Baked Potato Boats

Ingredients

  • 4 med Potatoes for baking
  • 8 x Rashers streaky bacon
  • 125 gm Grated Cheddar cheese, (4oz)
  • 1 x 128 gram can chicken and mushroom toast topper
  • 1 x 400 gram can baked beans
  • 8 x Lettuce leaves, washed Diced red pepper to garnish, (optional)

Directions

  1. Preheat the oven to 200 C, 400 F, Gas Mark 6.
  2. Wash and prick the potatoes with a fork. Place on a baking tray on the centre oven shelf for approximately 1 hour, till cooked.
  3. Place the bacon on a baking tray and bake in the oven below the potatoes for 8-10 min till golden brown. Cut into small pcs. Place in a bowl with the cheese.
  4. When the potatoes are cooked, cut them in half lengthways. Scoop out the potato flesh from 2 potatoes into the bowl with the bacon and cheese. Take care as the steam from the potatoes is warm. Spoon the filling back into the potato skins.
  5. Place on a baking tray and return to the oven for a further 15 min till golden brown.
  6. Heat the beans and spoon onto the serving plate.
  7. Place the potato halves on top and make sails by fixing a leaf on top of each potato with a cocktail stick.
  8. NOTES : A delicious and fun way of serving potatoes with a tasty savoury filling.
