Baked Pork Loin Roast with Rosemary Potatoes

Makes a wonderful Sunday Meal for a family. Use leftovers for sandwiches-Yum!

Ingredients

  • 6 pound Pork Tenderloin Roast
  • 5 pounds small potatoes
  • 1-1/4 cup vegetable stock
  • one teaspoon cumin
  • one teaspoon garlic salt
  • one teaspoon black pepper
  • one teaspoon onion powder
  • one lemon
  • sprigs of fresh rosemary

Directions

  1. Place pork loin seasoned roast in a large baking dish with vegetable stock, cover with foil and bake 30 minutes at 375 F
  2. Remove from hot oven and add potatoes, lemon juice, return foil and place back into the oven for 30 more minutes
  3. Garnish with fresh rosemary
  4. Let rest then slice
