Baked, Not Fried Zucchini and Fat Free Ranch Recipe

I was looking for a healthier alternative to fried zucchini but couldn't find any. So I adapted a recipe for oven fries and transferred the idea to zucchini. It turned out to be better tasting than fried zucchini in my opinion!

Directions

  1. Spray a baking sheet with olive oil spray
  2. Slice zucchini into 1/2 inch slices
  3. Dip in egg
  4. Dip in bread crumbs
  5. Place on baking sheet
  6. Spray the top of zucchini lightly with the olive oil spray
  7. Bake at 350 for 20 - 25 minutes turning over half way through
  8. For the dressing:
  9. Mix the ranch dressing mix with the yogurt.
  10. This can be served right away, but gains flavor the longer it sits in the fridge.
  11. Dip the zucchini in yogurt ranch and enjoy!
