Ingredients

  • 6 ounce log fresh white goat cheese
  • 6 Tbsp. extravirgin extra virgin olive oil
  • 1/2 c. dry bread crumbs
  • 1/2 tsp dry thyme
  • 1/2 tsp dry oregano

Directions

  1. Slice goat cheese into 1/2 inch thick rounds.
  2. Mix bread crumbs with herbs and spread on a sheet of waxed paper.
  3. Pour 4 Tbsp. oil into a shallow bowl.
  4. Dip goat cheese into oil to coat completely then into bread crumb mix.
  5. Set on a tray and chill for 1 hour. Pre heat oven to 375. Spread remaining 2 Tbsp. extra virgin olive oil on a baking sheet with sides.
  6. Place goat cheese rounds on baking sheet and bake till a golden brown crust forms about 8 min.
  7. Turn rounds over and bake another 3 min.
  8. Serve hot on a bed of dressed salad greens.
