Ingredients

• 2 tablespoons olive oil
• 4 crimini mushrooms, roughly chopped
• 1/4 medium white onion, finely chopped
• 4 medium to large tomatoes, washed, dried, insides scooped out
• 4 eggs
• salt and pepper to taste
• fresh parsley, chopped, for garnish, optional
