Ingredients

  • 6 x Skinned catfish filets
  • 1 c. Dry bread crumbs (plain, whole wheat or possibly Italian)
  • 3/4 c. Grated Parmesan cheese
  • 1/4 c. Minced parsley
  • 1 tsp Paprika
  • 1/2 tsp Oregano
  • 1/4 tsp Basil
  • 2 tsp Salt
  • 1/2 tsp Pepper
  • 1/3 c. Butter or possibly margarine, melted Lemon wedges Parsley

Directions

  1. Clean, wash and pat fish dry. Combine bread crumbs, Parmesan cheese, parsley, paprika, oregano, basil, salt and pepper. Dip catfish in melted butter and roll in crumb mix. Arrange fish in a well greased 9x13 baking dish. Bake at 375 for about 30 min or possibly till fish flakes easily when tested with a fork. Garnish with lemon wedges and parsley.
