Baked Bay Scallops

Ingredients

  • 1 c. (2 sticks) butter, at room temperature
  • 1 c. fresh bread crumbs
  • 6 garlic cloves, crushed
  • 2 T finely chopped onion
  • 1/2 c. minced fresh parsley
  • 2 ounce (1/4 c.) white wine or possibly sherry
  • Juice of 1/2 lemon
  • Salt and freshly grnd pepper
  • 2 T vegetable oil
  • 2 T diced onion
  • 1 1/2 lbs. fresh bay scallops
  • 1/2 pound mushrooms, sliced

Directions

  1. Mix together butter, bread crumbs, garlic, chopped onion, parsley, wine, lemon juice and salt and pepper to taste. Form into roll and wrap with waxed paper. Refrigerate garlic butter till hard, at least 1 hour.Preheat oven to 450 degrees. Grease shallow baking dish or possibly au gratin pan. Heat oil in large frying pan over medium heat till haze forms. Add in diced onion and saute till soft but not browned. Add in scallops and mushrooms and salt and pepper to taste and saute briefly. Drain off liquid.
  2. Arrange scallop mix in prepared dish. Slice garlic butter and arrange evenly over scallops. Bake till butter is hot and bubbly, about 5 - 10 min. Serve immediately. Scallops can also be broiled. Place about 3 inches from heat and broil till bubbly, 3 to 4 min. Serves 4.
