Baja fish tacos

Ingredients

  • 8 tbs sour cream
  • 8 tbs mayonnaise
  • 4 tbs chopped fresh cilantro
  • 1.25oz taco seasoning mix, divided
  • 1lb (about 4 total) cod or other white fish fillets, cut in 1" pieces
  • 2 tbs vegetable oil
  • 2 tbs lemon juice
  • 12 taco shells, warmed
  • TOPPINGS
  • shredded cabbage
  • chopped tomato
  • lime juice
  • thick and smooth taco sauce

Baja fish tacos

Time: 5 minutes prep, 5 minutes cook
Servings: 6 servings
 

Directions

  1. COMBINE sour cream, mayonnaise, cilantro and 2 tablespoons seasoning mix in small bowl.COMBINE cod, vegetable oil, lemon juice and remaining seasoning mix in medium bowl; pour into large skillet.
  2. Cook, stirring constantly, over medium-high heat for 4 to 5 minutes or until fish flakes easily when tested with fork.
  3. FILL taco shells with fish mixture.
  4. Top with cabbage, tomato and sour cream mixture, lime juice and taco sauce.

      Great with the kids who loathe Fish. We just had this about half an hour ago using Costco's Alaskan Pacific cod and the kiddos just gobbled it up. My only critique is that the prep time really isn't 5 minutes unless you already purchased diced cabbage/lettuce and tomatoes. For us it was about 20 minutes.

          This is another taco recipe that i will try soon. I like tacos as much as i like pizza too!
