Bailey's Irish Cream Brownies Recipe

I love Bailey's, and these brownies are infused with irish cream flavor in both the batter nand the frosting. I found these irresistable, and so did our kids. They're a perfect treat for St. Patrick's Day or whenever!

  • FOR THE BATTER
  • 1 (20 ounce) package dark chocolate brownie mix
  • 1/2 cup Bailey's Irish cream liqueur
  • 1/2 cup vegetable oil
  • 2 eggs
  • FOR THE FROSTING
  • 2 teaspoons milk
  • 2 tablespoons Irish cream liqueur
  • 2 teaspoonS brewed coffee
  • 1/2 cup butter, softened
  • 2 cups confectioners' sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup toffee baking bits

Directions

  1. Preheat oven to 350 degrees F
  2. Stir together the first four ingredients and spread in a greased, 9 x 13 inch baking pan. Bake in the preheated oven until the edges have started to pull away from the sides of the pan, about 30 minutes. Remove from oven to cool on a wire rack.
  3. Place the milk, 2 tablespoons of Bailey's, and coffee in a small bowl and microwave on high until the mixture boils, about 1-2 minutes. Set aside to cool.
  4. Beat the butter and confectioners' sugar in a medium bowl with an electric mixer until smooth. Add the vanilla extract and the cooled Bailey's mixture, and beat well. Spread evenly over the brownies. Sprinkle evenly with the toffee bits. Cut into 24 pieces and serve!

    I'm not a big fan of brownies with frosting, but these were very tasty. If they had twice the batter and half the frosting I probably would have given them five stars!
