Ingredients
- 6 large potatoes peeled and diced in 1/2 pieces
- 3 carrots, peeled and diced
- 3 celery stalks diced
- 1 medium onion diced
- 1/2 pkg bacon, cut into small pieces
- 2 cloves garlic, cut up
- 1 bay leaf
- 1/2 tsp celery seed
- 1 tab fresh thyme
- 24 oz chicken broth
- 2 cups half and half
- salt and pepper to taste

Awesome Potato Soup
Time: 30 minutes prep, 45 minutes cook
Servings: 6
Directions
- Fry bacon until crisp, remove from skillet and set aside.
- Saute carrots, celery and onion in bacon grease until translucent.
- Discard bacon grease.
- Add potatoes and chicken broth to sauce pan, cook for 5 minutes.
- Add bacon, thyme, celery seed, salt and pepper, bay leaf, garlic, carrots, celery and onion to potato sauce pan. Simmer for 30 minutes.
- Add half and half and cook for an additional 10 minutes until heated through.
- Top with cheddar cheese if you like - Serve with Sour Dough Bread
- Even better the next day!
