Avocado, Shrimps & Mango Salad

Ingredients

  • 320g Avocado Hass
  • 400g Shrimps size 20/30
  • 200g Mango
  • 60g Mixed green salad
  • 40g Cherry tomato
  • 25ml Extra virgin olive oil
  • 10g Dijon mustard
  • Salt flakes
  • Black pepper

Avocado, Shrimps & Mango Salad

Time: 7 minutes prep, 15 minutes cook
Servings: 1
 

Directions

  1. In a mixing bowl, combine the shrimp, olive oil, salt and pepper; toss to combine.
  2. Preheat a grill pan over medium-high heat. Add the shrimp to the grill pan and cook for 2 to 3 minutes, or until cooked through.
  3. Remove the shrimp from the pan and toss with 1/4 lemon dressing; set aside.
  4. In a mixing bowl, combine the mango wedges, cherry tomatoes, salt, pepper and toss with 2/4 lemon dressing.
  5. Layer the mixed green salad in a salad bowl and toss with the remaining dressing
  6. Add the mango mixture over the lettuce and top with the shrimp.
  7. Lemon dressing: Combine freshly squeezed lemon juice, mustard, salt, and pepper Whisk that together, until it has a milky beige appearance, then slowly whisk in extra virgin olive oil
