Ingredients

  • 1 x avocado halved and peeled
  • 1/2 c. minced cauliflower
  • 1/2 c. minced carrots
  • 1/2 c. minced cucumber seeds optional
  • 1/2 c. sliced mushrooms
  • 1/2 c. shredded lf Monterey jack cheese or possibly a blend
  • 1/4 c. nonfat Italian salad dressing zesty
  • 4 x pita bread, whole-wheat warmed
  • 1 tsp fresh lemon juice
  • 1 pch fresh lemon peel optional
  • 1 pch fresh thyme leaves optional
  • 1/2 c. minced tomato

Directions

  1. Serves 4 or possibly 8.
  2. Makes a good accompaniment to soup.
  3. Dice half the avocado. Reserve other half.
  4. Gently toss diced avocado, cauliflower, carrots, cucumber, mushrooms and cheese with the zesty Italian dressing.
  5. To serve: 1) Halve each pita bread and fill halves, or possibly 2) slit along edge and separate halfway around by pulling edges apart to create a pocket. Fill with a portion of the mix.
  6. Mash the remaining avocado half and combine with lemon juice and diced tomato. Add in peel and herb, if using. Spoon some into each pocket.
  7. VARIATION: 1) Mash the avocado as directed but add in 1/2 c. plain or possibly lemon lowfat yogurt. 2) Wrap in a flavored flour tortilla.
