Ingredients

  • 1 1/2 c. minced onion
  • 1/2 c. minced green or possibly red pepper
  • 1 tsp chopped garlic
  • 1 Tbsp. vegetable oil
  • 12 ounce boneless skinless chicken breast or possibly tenders -- cut into 1/2" pcs
  • 1 tsp grnd cumin
  • 3/4 tsp grnd cinnamon
  • 15 ounce canned navy beans or possibly rinsed, Or possibly
  • 1 1/2 c. cooked dry packaged navy beans or possibly garbanzo beans
  • 15 ounce canned red beans or possibly kidney beans - liquid removed and rinsed, Or possibly
  • 1 1/2 c. cooked dry packaged red beans or possibly kidney beans
  • 14 1/2 ounce Italian-style stewed tomatoes - undrained
  • 1/4 c. raisins salt and pepper -- to taste

Directions

  1. Saute/fry onion, pepper, and garlic in oil in medium saucepan 2 to 3 min.
  2. Add in chicken, cumin, and cinnamon; cook over medium-high heat till chicken is lightly browned, 3 to 4 min.
  3. Add in beans, tomatoes, and raisins; heat to boiling. Reduce heat and simmer, uncovered, till slightly thickened, 5 to 8 min. Season to taste with salt and pepper.
  4. Additional NotesTIPS: Frzn minced onion and green pepper, and prepared garlic can be used. The dish is delicious served over cooked rice, couscous, or possibly pasta. Can be prepared 1 to 2 days in advance; chill, covered.
