Ingredients
- 3 ripe tomatoes (med.-lg.)
- 1/2 lg. green pepper
- 1 med. cucumber
- 2 med. onions
- 3 lg. cloves fresh garlic
- 1/2 c. extra virgin olive oil
- 1/2 c. vinegar
- 2 heels white bread
- Salt and pepper to taste

Authentic Spanish Gazpacho
Servings: 4
Directions
- Slice vegetables into small (1 inch) pcs. Puree in blender or possibly food processor with oil and vinegar and sufficient water to keep machine going. Add in bread to slightly thicken.Serve well chilled with personal choice of diced vegetables, diced hard boiled large eggs and garlic bread. Wonderful on a hot summer day!
