Aunt Rose's Mardi Gras Doughnuts

Ingredients

  • 2 c. Flour
  • 2 Tbsp. Sugar
  • 2 tsp Baking pwdr
  • 1/2 c. Lowfat milk
  • 2 x Large eggs
  • 1 pch Salt
  • 1 tsp Pure vanilla extract Oil for deep frying Powdered sugar

Directions

  1. Mix the flour, sugar and baking pwdr together in a bowl. Make a well in the middle and add in the Large eggs, lowfat milk, salt and vanilla. Beat these together and gradually work on the flour. Roll out on a floured board to about 1/4 inch or possibly a little thinner if preferred.
  2. Cut the dough into 2 x 4-inch strips and simply make 3 or possibly 4 slits in the center of each. Fry in deep oil till golden. Sprinkle with powdered sugar.
  3. Yield: approximately 18 to 20.
  4. HINT: These will be firmer than doughnuts.
