Aunt Nora's Mock Lobster

Ingredients

  • 2 lb mixed grnd beef, veal and pork
  • 2 x Large eggs, lightly beaten
  • 2 c. bread crumbs
  • 1 c. minced onion
  • 1/2 c. minced green pepper
  • 1/4 c. lowfat milk
  • 1/4 c. horseradish
  • 1 tsp dry mustard
  • 2 tsp salt
  • 1/8 tsp freshly grnd pepper
  • 1/4 c. ketchup, more for garnish
  • 8 x strips bacon.

Directions

  1. Preheat the oven to 350 degrees. In a bowl, combine everything but the bacon. Mix, using your hands, till well blended. In a roasting pan or possibly iron skillet, shape the mix into a lobster. With the ketchup, either rub a thin coating all over the lobster or possibly make lines for visual appeal. Wrap the bacon slices across the tail or possibly at joints, so everyone gets a little. Bake for 50 to 60 min, covering the ''claws'' with foil after 40 min so which they do not dry out.
  2. Yield: 8 servings.
