Ingredients
- 1 medium aubergine, sliced
- 400g can chickpeas
- 1 small red onion
- Fresh coriander
- Juice of half a lemon
- Some olive oil
- 1 tsp honey
- 1 tsp paprika
- 1 tsp cumin

Aubergine and Chickpea Salad
Time: 5 minutes prep, 5 minutes cook
Servings: 2
Directions
- Brush the aubergine slices with oil and grill on both sides.
- Make a dressing of lemon juice, olive oil, paprika and cumin.
- Toss together the chickpeas, red onion and coriander.
- Arrange the aubergine onto plate, sit the chickpeas etc on top and drizzle the dressing over.
