Ingredients

  • 1/2 lrg beet
  • 1/2 x Asian pear, sliced
  • 1 x shallot, diced
  • 1/2 Tbsp. chives
  • 1/2 x red bell pepper, roasted and sliced
  • 1/2 Tbsp. fresh basil, minced
  • 1/2 Tbsp. fresh thyme, minced Lime Soy Vinaigrette (see separate recipe)

Directions

  1. MAKES 2 SERVINGS VEGAN
  2. Preheat oven to 375 degrees. Rub beet with oil; wrap in aluminum foil. Roast on baking sheet till tender, about 1 1/2 hrs. Let cold; peel.
  3. Mix beet and pear slices with shallot, chives, bell pepper, basil and thyme.
  4. Dress to taste with vinaigrette.
  5. Makes 2 servings.
