Ingredients

  • 2 Tbsp. extra virgin olive oil
  • 1/3 c. chopped onion
  • 3 clv garlic, chopped
  • 2 whl Large eggs
  • 2 x egg whites
  • 1 x 14 oz can artichoke hearts, liquid removed, trimmed, and minced
  • 1/4 c. dry bread crumbs
  • 1/2 lb Swiss cheese
  • 2 Tbsp. fresh chopped parsley
  • 1/4 tsp oregano
  • 1/2 tsp salt Pepper or possibly dash Tabasco, to taste

Directions

  1. Heat a medium-sized skillet over moderate flame, then add in oil. Saute/fry onion and garlic till soft and translucent/soft. Don't brown.
  2. Beat Large eggs and whites in bowl. Add in minced artichoke hearts. Stir in rest of ingredients.
  3. Pour into a greased or possibly sprayed 7 x 11 baking dish.
  4. Bake 25-30 minutes. at 325 F till set. Let cold before cutting into squares.
