Arthur's Battered Fish Fillets

Ingredients

  • 3 lb Fish Fillets (boneless)
  • 1 c. Lowfat milk or possibly Water
  • 2 c. All-purpose flour
  • 3 c. Pancake mix
  • 3 c. Club soda
  • 1 Tbsp. Onion pwdr
  • 1 Tbsp. Seasoned salt
  • 1 tsp Black pepper
  • 1 tsp Garlic pwdr

Arthur's Battered Fish Fillets

Directions

  1. Dip moistened (lowfat milk or possibly water moistened) fish pcs proportionately but lightly in the flour. Dust off any excess flour and allow pcs to air dry on waxed paper,about 5 min.
  2. Whip the pancake mix with the club soda to the consistency of buttermilk-pourable, but not too thin and not too thick. Beat in the onion pwdr, seasonedsalt, black pepper and garlic pwdr.
  3. Dip floured fillets into batter and drop into 425 degree oil in heavy frying pan, using meat thermometer.
  4. Brown about 4 min per side.
  5. Arrange on cooked fish filets on a cookie sheet in a 325 degree oven till all fish pcs have been cooked in oil.
