Ingredients
- 300ml buttermilk
- 1 sprig fresh sage
- 1 sprig fresh rosemary
- 2 sprigs fresh thyme
- 1 sprig fresh basil
- 125g plain flour
- 125g wholemeal flour
- 50g oatbran
- 1 teaspoon salt
- 1 tablespoon bicarbonate of soda

Aromatic soda bread mini loaves
Time: 15 minutes prep, 25 minutes cook
Servings: 8 loaves
Directions
- PRE-HEAT THE OVEN TO 200ËC/180ËC FAN/GAS 6
- Wash and finely chop all the herbs.
- Mix the two flours, oatbran, salt and bicarbonate of soda in a bowl. Add the buttermilk and stir to form a dough.
- Transfer the mixture to a floured surface and knead gently. Divide the dough into 8 balls. Shape each ball into a rectangular mini loaf and cut two slits on the top of each one.
- Place the mini loaves on a floured baking tray and bake for 25 minutes or until they sound hollow when tapped on the bottom.
