Aromatic soda bread mini loaves

Ingredients

  • 300ml buttermilk
  • 1 sprig fresh sage
  • 1 sprig fresh rosemary
  • 2 sprigs fresh thyme
  • 1 sprig fresh basil
  • 125g plain flour
  • 125g wholemeal flour
  • 50g oatbran
  • 1 teaspoon salt
  • 1 tablespoon bicarbonate of soda

Aromatic soda bread mini loaves

Time: 15 minutes prep, 25 minutes cook
Servings: 8 loaves
 

Directions

  1. PRE-HEAT THE OVEN TO 200˚C/180˚C FAN/GAS 6
  2. Wash and finely chop all the herbs.
  3. Mix the two flours, oatbran, salt and bicarbonate of soda in a bowl. Add the buttermilk and stir to form a dough.
  4. Transfer the mixture to a floured surface and knead gently. Divide the dough into 8 balls. Shape each ball into a rectangular mini loaf and cut two slits on the top of each one.
  5. Place the mini loaves on a floured baking tray and bake for 25 minutes or until they sound hollow when tapped on the bottom.
