Ingredients

  • 1/2 tsp chilli flakes
  • 1 tsp cumin
  • 2 tsp paprika
  • 4 Tbsp. fresh lemon juice
  • 2 Tbsp. fresh minced mint
  • 5 x cloves garlic, chopped
  • 6 lrg tomatoes, peeled and cut into eighths
  • 1 1/2 kg potatoes, peeled, cut into halves and then sliced
  • 8 c. water
  • 1 c. finely minced parsley or possibly coriander or possibly both
  • 1 1/2 kg hard white fish fillets or possibly seafood or possibly a, cut into large mix, pcs
  • 4 Tbsp. extra virgin olive oil

Directions

  1. Place the first 9 ingredients in a large saucepan and bring to the boil.
  2. Simmer for 20 min, covered then remove cover and simmer 10 min more.
  3. Add in fish/shellfish and the extra virgin olive oil with salt and pepper to taste and cook for 10 min.
  4. Ladle the soup into individual bowls and sprinkle extra coriander and parsley over each serve.
