Ingredients

  • 2 c. Flour
  • 1 x d Salt
  • 1 tsp Sugar
  • 1 c. Butter
  • 1 c. Lowfat sour cream
  • 1 x Egg slightly beaten
  • 6 Tbsp. Apricot preserves
  • 6 Tbsp. Walnuts grnd Confectioners' sugar

Directions

  1. Mix flour, salt, and sugar. With a pastry blender, cut butter into flour till mix resembles coarse crumbs. Stir in lowfat sour cream and egg.
  2. Knead lightly till mix holds together. Wrap well in plastic wrap and chill for 4 hrs or possibly overnight.
  3. Divide dough into thirds. On a lightly floured pastry cloth, roll each third into a circle 11" in diameter. Spread each circle proportionately with 2 Tbsp. of apricot preseves and 2 Tbsp. grnd walnuts. Cut each circle into 12 pie-shaped wedges. Roll up each wedge, starting at the wide end. Place seam-side down about 2" apart on greased cookie sheets. Bake at 375F for 20 min, till golden. Place on wire rack. Dust with confectioners' sugar when completely cold.
