Apricot Ginger Cookies Recipe

Ingredients
- 150 gm butter
- 75 gm grated gula Melaka
- 25 gm castor sugar
- 1 x egg yolk
- 200 gm plain flour
- 1 Tbsp. cornflour
- 2 Tbsp. ginger pwdr
- 75 gm dry apricots chop finely
Directions
- Method:GREASE baking trays with butter or possibly corn oil. Preheat oven to 180 C. Cream butter and sugar till light and creamy. Beat in egg yolk till light and fluffy.
- Add in sifted flour and apricots and mix well. Roll out in between plastic sheets and cut out with a cookie cutter. Place on prepared trays.
- Bake in preheated oven for 13 to 15 min. Leave cookies on baking tray for 1 to 2 min, then transfer onto wire rack to cold
