Apricot Delight ( Khubani Ka Meetha )

Ingredients

  • 300 gm dry indian apncots
  • 750 ml water
  • 150 gm sugar
  • 2 Tbsp. almonds minced
  • 4 Tbsp. double cream
  • 2 sht edible silver foil (varq) optional

Apricot Delight ( Khubani Ka Meetha )

Directions

  1. Combine the apricots and water and stew them on a low heat till soft and pulpy.
  2. Make a syrup by boiling the sugar and some of the water from the cooked apricots.
  3. The syrup should be fairly thick.
  4. Remove the stones from the apricots and throw away.
  5. Mix the fruit into the syrup and spoon into individual bowls.
  6. Sprinkle the almonds and drizzle the cream over each seeing.
  7. Place a piece of silver foil on top of each bowl and serve well chilled.
  8. This dish comes from Hyderabad and is reputed to be from the erstwhile ruler the Nizams kitchen
