Apricot And Walnut Brown Rice Stuffing

Ingredients

  • 1/3 c. onions, minced
  • 1/3 c. celery, minced
  • 1 Tbsp. butter or possibly margarine
  • 2 c. cooked brown rice
  • 2/3 c. walnuts, coarsely minced
  • 2/3 c. dry apricots, coarsely minced
  • 3 Tbsp. pine nuts, toasted
  • 3 Tbsp. seedless raisins, plumped
  • 1 Tbsp. snipped fresh parsley
  • 1/2 tsp thyme
  • 1/4 tsp grnd sage Salt, to taste Fresh grnd black pepper, to taste

Directions

  1. Cook onion and celery in butter in small skillet over medium heat till tender. Combine all ingredients in large bowl; turn into greased 2-qt baking dish. Cover with foil and bake at 350 degrees F, 20-25 min. (Stuffing may be baked inside poultry.)
