Applesauce Spice Cake With Cream Cheese Icing

Ingredients

  • 1 1/2 c. Packed Brown Sugar
  • 1/2 c. Light Margarine Chilled
  • 1 1/2 c. Chunky Applesauce
  • 1/4 c. Apple Butter
  • 2 lrg Egg Whites
  • 1 lrg Egg
  • 3 c. All-Purpose Flour
  • 2 tsp Baking Soda
  • 1 tsp Grnd Cinnamon
  • 1/2 tsp Grnd Nutmeg
  • 1/4 tsp Salt
  • 1 c. Raisins Vegetable Cooking Spray
  • 1/4 c. Minced Pecans Toasted
  • 1 1/2 tsp Light Margarine Chilled
  • 8 ounce Light Cream Cheese Chilled
  • 2 c. Sifted Powdered Sugar
  • 1 tsp Vanilla Extract

Directions

  1. Preheat oven to 350F.
  2. Beat sugar and butter at medium speed of a mixer till well blended (about 5 min). Add in applesauce, apple butter, egg whites, and egg; beat well.
  3. Add in flour and next 4 ingredients (flour through salt); beat well. Stir in raisins. Pour batter into a 13X9 inch baking pan coated with cooking spray. Bake at 350F for 45 min or possibly till a wooden pick inserted in center comes out clean.
  4. Cold completely on a wire rack.
  5. Spread cream cheese icing over cake, and sprinkle with pecans.
  6. Cream Cheese Icing:Beat butter and cheese at high speed of a mixer till fluffy. Add in sugar; beat at low speed till well blended. Add in vanilla; beat well.
