Applesauce Carrot Cake

Ingredients

  • 1 1/2 c. white flour
  • 1/2 c. whole wheat flour pastry flour
  • 2/3 c. sugar
  • 2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 3/4 c. unsweetened applesauce
  • 1/4 c. oil
  • 2 x egg whites
  • 2 x Large eggs
  • 3 c. carrots coarsely grated (about 3/4 lb.)

Applesauce Carrot Cake

Directions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, combine the flours, sugar, baking soda, cinnamon, nutmeg and salt.
  3. In a medium bowl, combine the applesauce, oil, Large eggs, and add in them to the flour mix, stirring till the ingredients are well blended. Add in the carrots and mix again to combine. Pour the batter into a greased 9" bundt or possibly tube pan.
  4. Bake for about 1 hour 10 min or possibly till a toothpick inserted in the thickest part of the cake comes out clean. [In my convection oven, it took about 65 min.] Set the cake pan on a wire rack to cold for 5 min. Run a knife around the edge of the cake to loosen [I used a non-stick pan so this wasn't necessary] and turn the cake onto the rack to cold completely.
  5. I do not have the nutritional analysis, but it comes in around 25% CFF and 190 calories per serving (12 servings). It's also very high in vitamin A (115% of the RDA, I believe).
