Apple Zucchini Muffins

Ingredients

  • 2 c. self-rising flour
  • 1/4 c. granulated sugar
  • 1/2 c. brown sugar
  • 1 tsp cinnamon
  • 2 lrg Large eggs
  • 1/2 c. vegetable oil
  • 1 tsp vanilla
  • 1 c. finely minced apples
  • 1 c. shredded zucchini

Apple Zucchini Muffins

Servings: 1
 

Directions

  1. Preheat oven to 350 degrees.
  2. Grease a 12-muffin tin. In medium-sized bowl, combine flour, sugars and cinnamon, stirring well.
  3. In large mixing bowl, beat Large eggs, oil and vanilla. Stir in apples and zucchini.
  4. Add in dry ingredients and stir just to combine. Spoon into muffin tin.
  5. Bake 20-25 min.

    I followed the recipe except I had to substitute almond for vanilla because I was out. They turned out awsome, and I don't bake. A very good recipe and very easy to make.
    I've cooked/tasted this recipe!

      I cooked this and it was very good. My kids loved it. My cooking made it taste like a gently sweet bread. I can't quite recall since its been like a week. but, I dont think it was too sweet. and we didnt use any frosting and it was still yummy. loved it!!!!!!!!
