Apple & Walnut Oatmeal - microwave-quick!

A welcome alternative to traditional oatmeal, and perfect for fall or back-to-school breakfasts. I love the cinnamon apple flavors and crunchy nut texture. Optionally substitute your favorite apple type and/or use pecans or almonds in place of walnuts.

Ingredients

  • 1 cup apple juice or cider
  • 1 cup water
  • 1 cup oatmeal
  • 1 medium Granny Smith apple, peeled, cored and 1/4" diced
  • 1/4 cup chopped walnuts
  • 1 tablespoon brown sugar
  • 3/4 teaspoon cinnamon
  • Pinch salt

Directions

  1. Place ingredients in microwave-safe bowl or large Pyrex glass measure (mixture will expand and boil up the sides as it cooks so a deep bowl is best.)
  2. Cover loosely and cook on High for 3 to 3 1/2 minutes (stir after 3 minutes and add the extra 1/2 minute if needed to reach oatmeal serving thickness.)
  3. Serves about 3.
