Ingredients

  • 2 c. all-purpose flour
  • 2 Tbsp. sugar
  • 1 Tbsp. baking pwdr
  • 2 tsp grnd cinnamon
  • 1 3/4 c. skim lowfat milk
  • 2/3 c. pourable egg substitute
  • 5 Tbsp. butter or possibly margarine melted
  • 3/4 c. minced cored peeled apple
  • 3/4 c. raisins

Directions

  1. Combine flour, sugar, baking pwdr and cinnamon in a large mixing bowl; set aside.
  2. Combine lowfat milk, egg substitute and 4 Tbsp. butter in a medium mixing bowl, mixing well. Stir into flour mix till just blended. Lightly stir in apple and raisins.
  3. Brush some of remaining 1 Tbsp. butter over a large, heavy-bottom skillet or possibly griddle; heat over medium-high heat. When butter bubbles pour 1/4 c. batter for each pancake onto griddle. Cook till bubbly (about 2 to 3 min per side), turn and cook till lightly browned.
  4. Repeat with remaining batter till finished. Serve with your choices of more melted butter, jam, powdered sugar, syrup or possibly fresh fruit topping.
  5. This recipe yields 16 pancakes.
