    Hi, Veronica - At about $20.00 a quart for Everclear, this could get expensive. I make this with 1 gal. of unpasturized apple cider, 1 gal. of apple juice, 1Tbs ground cinnamon, 8 cinnamon sticks, 1 C granulated and 1 C dark brown sugars and 1 qt. of Everclear. Your addition of the allspice berries is a nice touch, as would be a 1/2 tsp ground cloves. The longer the juices boil, the better the flavor. The apple juices must be cold (room temp) before adding the Everclear, as it is extremely flammable. Pax tecum.
