  • 1 x all-purpose c. flour
  • 2 Tbsp. brown sugar - (packed)
  • 2 tsp baking pwdr
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 3/4 c. lowfat milk plus
  • 2 Tbsp. lowfat milk
  • 2 x Large eggs separated (egg whites beaten till stiff)
  • 1 tsp vanilla extract
  • 1/2 c. apples peeled, minced fine
  • 1/2 c. pecans minced

Directions

  1. Stir together the flour, brown sugar, baking pwdr, salt and cinnamon in mixing bowl.
  2. Beat egg yolks in separate bowl; stir in lowfat milk and vanilla.
  3. Add in liquid mix to dry ingredients, stirring just till blended. Mix in beaten egg whites.
  4. Heat greased griddle or possibly skillet over medium heat or possibly to 375 degrees. Griddle is ready when a few drops of water bubble and skitter rapidly around.
  5. For each pancake, pour scant 1/4 c. batter onto warm griddle. Cook pancakes till puffed, bubbly and dry around edges. Turn and cook other sides till golden.
  6. This recipe yields about 10 (4-inch) pancakes.
  7. Yield: 10 pancakes
