Apple Oatmeal Scones with Caramel Glaze

Ingredients

  • 2 1/2 c flour
  • 1 c rolled oats
  • 1/3 c sugar
  • 1 T + 1 t baking powder
  • 1/2 t salt
  • 1/2 t baking soda
  • 1 t apple pie spice
  • 1/2 c applesauce
  • 1/4 c butter, cold and cubed
  • 1/2 c peeled, chopped apple
  • 1/4 c milk
  • 1/4 c apple juice
  • 1/3 c dried cranberries, optional
  • Preheat oven to 425. Line cookie sheet with parchment paper
  • In large bowl, combine flour, oats, sugar, baking powder, salt, baking soda, and apple pie spice.
  • Bake for 12-15 mins or until lightly browned. Remove from baking sheet and cool on wire rack for 10 mins Cut into 12 wedges.
  • Glaze with Caramel Glaze

  • 1/2 c packed brown sugar
  • 1/4 c butter, soft
  • 1 T corn syrup
  • 1/2 t vanilla extract
  • 1 to 1 1/2 c powdered sugar
  • 2-4 T milk

  • Add applesauce and butter. Cut in with a pastry blender until mixture resembles course crumbs. Stir in apple and dried cranberries if using. Add milk and apple juice to flour mixture. Stir together until dough forms a ball.
  • Turn dough out onto well floured surface; knead 10-12 times. Pat dough into a 8 inch circle. Place on prepared baking sheet. Use tip of knife to score dough into 12 wedges.
  • Bake for 12-15 mins or until lightly browned. Remove from baking sheet and cool on wire rack for 10 mins Cut into 12 wedges.

  • 1/2 c packed brown sugar
  • 1/4 c butter, soft
  • 1 T corn syrup
  • 1/2 t vanilla extract
  • 1 to 1 1/2 c powdered sugar
  • 2-4 T milk

Melt butter, brown sugar and corn syrup over medium low until butter melts and sugar dissolves.Remove from heat and stir in vanilla.

Add powdered sugar, whisk in enough milk to make a smooth glaze.

Pour Glaze over scones. Enjoy.
