Apple Marinated Pork Roast

Ingredients

  • 1 c. Dry white wine
  • 1/3 c. Apple juice, from frzn concentrate thawed
  • 1 sm Onion sliced thin rings
  • 1/4 c. Vegetable oil
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp Dry thyme crushed
  • 1/4 tsp Grnd cloves
  • 3 lb Pork center rib roast

Apple Marinated Pork Roast

Directions

  1. In a bowl, combine all ingredients except pork roast. Place pork roast in a plasticupbag; set in shallow baking pan. Pour marinade over pork and close bag. Marinate in refrigerator for 3 to 24 hrs, turning occasionally. Remove roast from marinade; reserve marinade. Place roast, rib-side down, in shallow roasting pan. Pour reserved marinade over roast. Insert meat thermometer so tip does not touch bone.
  2. Roast meat, uncovered, at 325 degrees for 2 1/2 to 3 hrs, or possibly till meat thermometer reaches 170 degrees. Baste roast with marinade once or possibly twice during cooking.
  3. To serve, transfer to a heated serving platter and slice.
